A Spoonful of Sugar...

It is common practice in our church to dedicate the first Sunday of every month to fasting and prayer. My family and I have often offered specific and unified prayers for special blessings or needs we may be seeking. Concerns over health and strength or special desires for insight are often the subject of our fasting and prayer.


This is an opportunity for our spiritual selves to overcome our physical selves. I have come to discover the unique blessing this has been in my own life and in our family as a whole.

As May was drawing to a close, I reflected on the month and pondered what I might dedicate my June fast to. I realized that, with all the chaos in our home right now, I was most in need of offering a prayer of Gratitude! A trial that I have ALWAYS viewed as the ONE thing I did not think I could survive happened to our family at the end of March. Rather than beating me down and causing me to fret and fright each and every morning, noon, and night (which is my habit), I have felt peace, joy, and an overwhelming sense of privilege for such a trial! As the days have turned into weeks and the weeks into months, I see what a gift this is for my husband, my family and myself!

It felt very good to declare that I had no needs nor special concerns that were more important than the awareness I had of all the small and mighty beauties that had filled my life in April and May. As I had journeyed throughout the months of April and May, I had taken stock each day  of the sweet hand of the Lord in my life. I was overcome by the small and simple things that can bring us joy if we just open up and see them for what they are.

I believe these gifts of bounty are manifest in each of our lives. I also believe that we must be in the right mindset, otherwise there is a good chance we won't recognize that which is right in front of our faces.We need to open our hearts to see the world, our lives and our experiences in a way that is contrary to public habit. When we look at what we lack, it is very difficult to see our abundance. There is no lesson that I spend more time teaching my kiddos than that "Happiness is a Choice" and choice is the only thing in this life that we truly have complete control over.

If we only see the trial, it may be impossible to watch the hand of Mercy come in and prepare a path to beauty that never before seemed possible. This is the power of stepping back and looking at what we THINK we see with new eyes- a better perspective.

After the storm, the rainbow WILL come, whether we choose to see it or not. The person who runs inside, angry about the storm that ruined the picnic is sure to miss the beauty in that very brief moment when the sun and the storm intersect. But he who chooses to dance in the rain, is sure to bask in the glory of what can only be created in full grandeur AFTER a storm!

Maple Glazed Almonds

Do you ever crave something?
I mean CRAVE something????

And then do you ever
panic when you go to make it
and you don't have what you need?

This happened to me today.
I wanted a salad with Glazed Cashews-
I toast them in a pan with a VERY small amount of butter,
when they are getting a pretty golden color,
I add in some agave nectar-
they get this yummy, crunchy, sweet flavor
and they taste AMAZING on any salad,

one of my favorites can be found here

I had no Agave,
and I only had salted cashews...

But I'd already made the salad
and I was hungry-

So I went made two substitutions
to a three ingredient recipe
(technically, is that even a recipe)
I used Slivered Almonds instead of Cashews
and Organic Pure Maple Syrup

I was NOT disappointed-
they were so Yummy!

I topped the salad with equal parts of
Grapeseed Oil and Cranberry Balsamic Vinegar

(I've mixed the Cranberry Balsamic with Black Currant
Balsamic and then used an equal portion of Olive Oil too)

Boosted Banana Muffins

 *** I've had a senior moment- I can't find my pics, so imagine yummy muffins,
I'll get back to you on the pictures.

My family used to look like this

One kiddo is serving an 18 month church mission

and two just left for school in Utah
Kiddo #1 and #3 off to USU

So needless to say,
my grocery shopping looks a little different lately-
and I have a lot of bananas that end up looking like this

rather than this :)

I've been making a lot of things out of BANANA,
bread, muffins, cake, smoothies...

You get the idea right??

I decided to go a little crazy one day when I saw this cereal-
Sorry for the fuzziness; it says Cinnamon Hazlenut
I have used it's sister cereal to make cranberry muffins
for like a ZILLION years!
Cranberry Almond Crunch
So I figured I could come up with a yummy recipe using
a cereal with a name like that!

To borrow a phrase from Mary Poppins-
these were Practically Perfect in Every Way...

The second time I made them,
I made them in Jumbo Muffin Tins and
topped them with a chunky cinnamon streusel.
We took them to a school breakfast-
EVERYONE who ate them wanted to know where
I had gotten them and they were the first muffins gone
(this up against the HUGE Costco/Sam's Club Muffins
that are more of a dessert than a breakfast food)

Try 'Em-
You won't be disappointed


Banana Muffins

2 1/2 c. flour
1 1/4 c. sugar
1 t. baking soda
1 box of Post Cinnamon Hazelnut Cereal
     (Or Post Crunchy Pecans Cereal)
2 eggs
2 c. buttermilk
1/2 c. butter
2 ripe bananas, mashed

2 TBSP. maple syrup
1/2 tsp each, cinnamon & nutmeg

Beat eggs and buttermilk together & syrup.
Stir in melted butter.
In a separate bowl, combine flour, sugar, soda, cereal and spices.
Add milk mixture and stir with as few strokes as possible.

Bake at 350 for 20 minutes, adjusting cook time to size of muffin.

*** My littles request these to be made with chocolate chips-
which just makes them YUMMY TOO!!

Sunday Sundae- Healthy Style

I'm going to tell you about it someday!

One day when I am sure that I can speak about it
with some level of confidence and humility-
right now it is still pretty personal,
But I joined An Addiction Recovery Program.

One reason I don't want to talk about it
YET...
Is that my Addiction is a widely debated topic
in the diet, nutrition and addiction fields

Some say "ABSOLUTELY" and others
laugh and scorn and say things like
"You don't know what you're talking about"

So I've kept it relatively to myself-
I've teased with my friends for a long time that
I was going to do it,
and Finally, I decided it wasn't a joke
(at least, it wasn't to me)
and I joined a program sponsored by my church-
You can learn more here if you are interested

My addiction is to Sugar-
To me it is a real, powerful and to easy to ignore problem-

But like I said,
more on that later!!

I have found that there are a few things I can
do to enjoy Dessert Time with my family on
Sunday evenings.
This is one of my Favorite-

The Waffle Bowls are Homemade
My Hubby is the Master at Waffle Bowl Making
and are made with alternative ingredients for me
but honestly, I don't often eat mine anyway
(I've just learned I'd rather not eat,
than deal with all the substitutions sometimes)

I add some delicious Fruit-
a hearty and healthy serving thank you very much!
I add lime juice and lemon & lime rind 20 minutes before I serve it
I top my "Sundae" with Plain Greek Yogurt
flavored with Cranberry Balsamic Vinegar
or Vanilla Bean Paste and Lemon Extract
What's Not Fabulous About This?
The last time we had ice cream Sundaes,
three of my five kids at home
opted for my version and said no
to the ice cream :)

Good as it Gets Granola

I have been avoiding Wheat and Wheat Products
for quite some time.
I can tell within two days when I am cheating
because my fingers and knees HURT,
my ankles and hands swell and I feel all over ACHY!

I can tell I've gone really too far outside of my
eating goals when my ears start to itch, my nose runs
and I break out in an all over rash (this is usually when
I am eating wheat and sugar). Add in soy to the mix
and you will quickly find me in an all over body rash
that has an itch to it that rivals poison ivy-
Though there is NO WAY
(at least that I know of)
to prove that preservatives and additives also make
me sick (its hard to find a food with preservatives that
does NOT contain one of the aforementioned products).

For me, this ain't NO DIET TREND-
it's a Quality of Life Trend!

But anytime someone asks me for menu ideas for
going Gluten Free, I panic just a little bit-
Gluten Free is a much bigger topic than simply
avoiding wheat products-
Gluten can be found in a wide range of products,
including make-up and deli meats.
For our friends with Celiac Disease (an auto-immune
disorder that causes damage- to the small intestine and
disrupts the absorption of foods; gluten is responsible
for the damage) being gluten free isn't a trend or a
dietary statement, it is a way of life.
I also highly advise those with Lupus or Crohn's Disease
to avoid gluten as much as you possibly can!

I can't guarantee the Gluten Free-edness of this
Granola Recipe-
BUT I can totally guarantee the YUMMY factor
that this recipe holds-

Really, granola is about as individual as the person
who makes it. Add whatever you like as fillers, I'm just
sharing my favorites.
I know you can buy granola at the store-
and it may even be comparable in cost-
But for me-
there is nothing like knowing what is in the food
that I eat and what I feed my kiddos!

It's a simple recipe, use whatever add ins you like best.
I love that this has no junk in it- it's just good for me,
good for you, good tasting...
It's simple Goodness
Now for Goodness Sakes go make some quick before
the kids get home from school!

Save Me Some... Granola

8 cups oats
1/2 cup brown sugar (I use coconut sugar or sucanat)
2 cups add ins *
*** Mix these ingredients together.

In a small pan, combine
1/2 cup honey or maple syrup
1/2 cup butter
1/2 cup coconut oil
1/2 cup water
*** Heat these four ingredients until butter melts
(P.S. The last time I made this,
I added some cranberry balsamic vinegar that I LOVE-
the granola had a darker color, but tasted so good)

Pour over the oat and yumminess mixture.
Divide between 2 cookie sheets with parchment paper
My 12 year old made this batch. How easy is that?
Bake at 300 for 30 minutes (I almost always
cook it longer than that!
Store and Enjoy

Makes me want to grab a ramekin and dish up...

Oooops! I guess I did grab a ramekin...
* Really, the sky is the limit for add ins.

Rainbow Israeli CousCous

We had the best dinner a few weeks ago,
I shared it with you here

and I said recipes would follow,
well, I am a little late with that!!

Well here is one of them,
it is for the Rainbow Israeli CousCous
this is so yummy and soooo easy!
But it makes for a fun side dish
and a sneaky way to get peppers
into my picky kids-

Rainbow Israeli CousCous

1 cup of Rainbow Israeli CousCous
(cook according to directions)
1 each red, yellow & orange bell pepper, diced
red pepper flakes (to taste)
scant squirt of fresh lime juice

Saute the diced pepper in olive oil,
squirt a small bit of lime juice and sprinkle
with red pepper flakes (we like things hot)
Add to the cous cous when it is done cooking
and voila-
YUMMY!!

I shouldn't have, but I did

I know better-
I really, really know better!

But I did it anyway-
and you know what,
I am DARN glad that I did!!

I bribed my 8 year old son
to try to eat healthy for ONE full week-
NO sugar,

The Makings of Chocolate Molten Lava Cake
NO artificial food
 
and LOTS & LOTS of
Fruits & Veggies


You see, we eat healthy-

at least mostly-

here at Chez Peterson,

But my two youngest-
well they are the shame of our Chez,
they are the pickiest of the picky-
so I got desperate and
I bribed him!!

In exchange, I offered a treat
at the local Yogurt Stop that he
has wanted for SOOOOOO long-

This is a treat I always say 'NO' to-
Not to mention,
in January, we stopped going for
store bought treats completely,
so he has been YEARNING to
go and get a big ole' yogurt smoothie!

I NEVER bribe healthy for junk-
I mean
REALLY- where is the logic??

But desperate times called for desperate measures-
and this mom saw NO other option.

He has been amazing-
He is bound and determined to succeed.
He has eaten veggies at EVERY meal,
he has tried cantaloupe, blackberries and green grapes-


he has eaten cucumbers, celery and avocado!


You don't live here, so you don't realize it
BUT this is BIG

Today is Day 4-
one more school day to go,
Next week we are going at it again-
we'll make it longer-
TEN DAYS!

There is hope yet that he won't turn to plastic
because of all the fake food he eats!

Day 64- Pumpkin Protein Smoothie

Tis the Season for all things

PUMPKIN 
I mean, seriously, what doesn't get
touched by pumpkins this time of year :)

But so many of the yummy 
Pumpkin recipes are for 
things that are off my radar for 
right now!!
I do have a yummy Pumpkin Muffin Recipe
that I can make with my
freshly ground Whole Wheat,
but I do have to keep them to a limit.

My kiddos love a good 
Pumpkin Shake, 
 Pumpkin shake recipe
so I decided to try a 
healthy Protein Pumpkin Smoothie-
it was an epic fail when we used
Greek Yogurt-
but with regular Yogurt it was 
a crowned victory-


With 30 grams of protein 
and 225 calories per serving-
this is a perfect post workout treat!

Pumpkin Protein Smoothie
1 Scoop Vanilla Whey
1/2 Cup Low Fat Milk
2 Tablespoons Canned Pumpkin
1/2 Cup Fat Free Vanilla Yogurt
Dash or two of Pumpkin Pie Spice
1/2 Cup Crushed ice

Blend in blender and enjoy!

Spicy Mango & Berry Salad

I told you about this Delicious Chicken
that has rocked our world since
I first discovered it earlier this summer!

All due Respect-
I do love the Chicken-
but I love this SALAD even more-


Use the leftover Chicken
from this RECIPE POST

Spicy Mango & Berry Salad

Mixed Greens
Raspberries & Blackberries
Mango
Red Onion slices
Spicy Chicken, cut into slices

We use all sorts of dressings with this combination
My daughter makes a delicious
Raspberry Vinaigrette Dressing
and we love this

Citrus Vinaigrette Dressing
1 shallot, finely minced
1/3 c. fresh orange juice
3 TBSP. lime juice
2 TBSP. honey or agave
1/2 tsp. cumin
1/2 tsp. sea salt
pepper to taste
1/2 c. grapeseed oil

Ahhhh, My New FavE

I am a MOM on a MISSION!

I am tired of Leftover Night-
BUT...
I hate to throw food out-

Also, contrary to popular belief,
I don't want to spend all day,
EVERY day in the kitchen!
NO! I would like to get out and take
a field trip once in a while-
nowhere fancy,
just maybe, the FAMILY ROOM-

My Mission-
which I have chosen to Accept
is to EAT all the food I prepare
and to minimize waste!

So there's my rant-
and here's my RAVE!!

This new Chicken Recipe-

it is so yummy Night One,
and even yummier Night Two
when made into the delicious salad
And if you are lucky enough to have
a Night Three out of it,
it makes a delicious wrap!!

One Recipe,
Three totally different Meals-
No one gets the
"Not Meatloaf AGAIN" glazed over look!!!

Oh yes, I like meals like that!!!

Sweet & Spicy Chicken
2 packages boneless, skinless chicken thighs
2 tsp. Grapeseed oil

Glaze:
3/4 cup honey
1 1/2 TBSP. Braggs Apple Cider Vinegar
 less than 1/4 tsp. Braggs Liquid Aminos

Rub:
3 tsp. garlic powder
3 tsp. chili powder
3/4 tsp. coriander
1 1/2 tsp. Sea Salt Flakes
1 1/2 tsp. cumin
1/2 tsp. chipotle chili powder
less than 1/4 tsp. crushed red pepper flakes (optional)

*** These are best Grilled ***
1. Combine rub ingredients in a small bowl.
2. Trim fat, rinse and allow to dry. Very lightly coat chicken with oil.
Rub the spices into the thighs.
3. Grill 3-5 minutes on each side.
4. While the chicken is cooking, warm the honey.
Whisk in vinegar. Reserve 2 TBSP. glaze and
brush the rest on the chicken in the last few minutes
 of cooking. Remove chicken and let it rest for 3-5 minutes.
Drizzle reserved glaze over finished chicken.

Last summer, I had a strange
and frustrating weight gain
thing going on!!

I was so frustrated and finally
called a nutritionist friend of mine.
She analyzed my food and exercise
and determined that I was eating
TOO FEW calories and not enough Protein!

Well hold on there, little Missy,
the only way I know to add more
calories is to add more treats-
but I knew that wasn't what I was looking for.

So in a search for recipes that would
support post-cleanse life,
bring calories and would also
taste yummy for the kiddos,
I found this delicious Chicken Salad.
I am going to tell you,
right here and right now,
that this isn't fancy--
can I just make that my
overall disclaimer!!
THIS IS NOT FANCY!

But it is YUMMY,
oh so YUMMY!!
It is light enough for a summer
lunch or dinner.
Easy enough to pack on a picnic,
and tasty enough to eat often.
Plus ALL my kiddos liked it
even the pickiest of the picky's
will eat it.

Chicken Salad Wrap

Boneless, skinless chicken breasts, shredded
mayonnaise
Dijon mustard
green onions
freshly ground black pepper
fresh dill
diced celery
red pepper flakes

I didn't give you any measurements for a few
reasons. First of all, I don't care for mayonnaise,
so I use the smallest amount possible. And to be
honest, I think the entire recipe is subject to
your own preferences. I like that I can add
everything but the mayo and mustard and pack
in a picnic cooler. Than I just add the condiments
when we are ready.

I serve this in many ways, the pictures above
are on a wrap with cucumbers and red onions
and lettuce. Add red peppers, feta cheese
or spinach too.
Simple-
but easy and light!!

Whole Wheat Buttermilk Pancakes

I found this pancake recipe many years ago
in a fitness magazine. It is originally
from a spa in Utah that focuses on
health and wellness.

I forget about this recipe ALL the
time and I don't know why.

My family LOVES these pancakes,and they are a wonderful way to
start the day.

The fresh fruit cooks right into
the batter, which gives them a
fun little extra oomph.


Because the fruit adds so much
extra flavor,

we use very little syrup on them-

less sugar to start the day-
Can't help lovin' that!

And of course,
for the picky face eaters in the house,
I make some without the berries-

I just can't believe they are soo picky!!
Whole Wheat Buttermilk Pancakes w/ Fruit

3/4 c. flour
3/4 c. whole wheat flour
3 TBSP. sugar
1/4 tsp. salt
1 t. baking soda
2 1/2 tsp. baking powder
1 TBSP. maple syrup
1 egg
1 c. buttermilk
3/4 c. milk
1 c. berries ***
2 1/2 TBSP. canola oil

***I stewed a mixture of blackberries,
raspberries and blueberries. I added
the zest & juice of 1/2 orange.
 
In a large bowl, combine dry ingredients.
In a medium bowl, combine remaining
ingredients except for oil and berries; mix well.
Add wet ingredients to dry and mix until smooth.

Lightly coat griddle with canola oil (don't skip this
& don't use spray)

Ladle approximately 3 T. batter on griddle
& sprinkle with 1 T. berries. Cover berries
with additional 1 T. batter and cook until
bubbles form. Flip and cook until other
side is golden brown.
