A Journey in 84 Days

Well it's no surprise to those who
know me that I am on a constant
journey to Health and Wellness.

I have spent the better part of the past
three years researching & studying
Health, Wellness and Balance.
Sometimes I am good at it,

and sometimes I am not!

I believe that "Healthy" is a
Mind/Body/Spirit unity-
A great body does NOT equal
a Healthy Body-
and it is HEALTHY that I aim for-
For some reason, I choose to ride
a Roller Coaster in my diet and
exercise routines:
sometimes I am up...

It takes 4 weeks for you to notice your body changing, 8 weeks for your friends and 12 weeks for the rest of the world. Dont quit. ,  superb

and for some reason, it resonated
with my heart.

Because of some personal stuff
that is going on in my life and the
lives of my family,
I decided to gather everything I've
learned, experienced or heard over the
past few years and put it all together
into one set of truths that we could use
to establish health and wellness that
we could not only ATTAIN,
but MAINTAIN!
I'm not interested in fads, crazes
or temporary fixes-

Because I want to keep track
and because it may be helpful to others,
I've decided to share my journey-

I promise great advice,
great recipes

and maybe even
great motivation in the process!!

Guidelines for My 12 Week Journey

My husband has decided to embark on
a 12 week Journey to better health
and fitness with me.
Neither one of us enjoy the phrase,
"As you get older..." when talking
about things that are changing-
like our mid sections or our
dropping energy levels!
I don't buy it-
at least not entirely.

He does better with stated guidelines,
so I made a list of Do's and Don't's
for us to follow. In case you are wondering,
because I want this to be a way of life,
not a trendy diet, our whole family is
obeying MOST of these rules as well.

1. Drink Plenty of Water including
a large glass of water before every meal
& DO NOT drink your calories!
Not revolutionary- but absolutely important

2. Eat a portion of Protein at every meal-
this is especially important if you are
lifting weights as part of your exercise
you should aim for 60-80 grams of protein per day

3. Rid Your Diet of White-
white flour, rice, pasta, potatoes-
you have to really watch this, many
wheat breads have white enriched flour
as their first ingredient!

4. Know what Fiber is and Eat it-
Fiber comes from both plant and grain
sources; know it, love it and EAT it
30-50 grams per day

5. An Apple a Day...
get your fruit. Apples and Berries have
unique health benefits, make sure
you are friends with them every day
Berry Topped Greek Yogurt- tons of protein & the anti-inflammatory benefit of berries

6. Think Lean & Green for Dinner-
think no carbs after lunch

7. Know what's in Your Food-
if it has a label read it & banish
salty foods altogether!
Pay careful attention to sodium, fat,
trans fats and especially words you can't say-
if you can't say, your belly can't process it

8. Measure Your Food-
Be real about how much you are eating and
what a serving size really is

9. No More Added Sweeteners-
artificial ones too baby!! these only increase
your sugar cravings

10. Say Good-bye to the Drive Thru-
no more fast or fried foods! Plan ahead,
pack a snack. if all else fails, buy a banana
when you stop for gas!

11. Eat Breakfast-
you can be certain I am a firm believer
in this topic- I don't care who you are,
or how busy you are, it's called the most
important meal of the day for a reason!

12. Make Your Own Food- if you
are a frequent eater outer, make a goal
to cut how often you eat out by half
not only will you eat better, but you will
find your family life is better as you join
around the kitchen table for some good ole' 
fashioned family conversation- plus habits that
will last a lifetime.
A few simple recipes, some delicious spices, oils and vinegars & you can do it better than any restaurant

13. Eat Your Veggies-
you should aim for twice as many veggies
as fruits- this is as important as the water
plan for it, do it and succeed!!

14. Go To Bed Hungry-
avoid eating at least 3 hours before you
plan to go to bed, the benefits are plenty
and I promise you won't starve in your sleep

15. Make sure you are getting enough sleep-
this is soooo important. your body needs time
to replenish, if you're not getting enough sleep
find out why and fix it- you can't lose weight or get
fit if your not sleeping- true story!!

16. Eat often and DO NOT skip meals!
aim for eating every 3-5 hours, and if you've
done a strength workout try to eat 20 grams of protein
within an hour. this keeps your body burning the calories
it receives.

17. Keep a Food Journal-
my favorite is www.myfitnesspal.com 
do what works best for you, but the best way
to see if you are eating too much is to see it all
tallied up

18. Set Your Goal-
are you here to lose weight, gain muscle,
find joy, relinquish stress? Set a bar- make it
a high bar- remove your obstacles and 
go for the Gold!
 7 Day arm challenge - different exercises every day for a week, one commenter says she lost 1.5 inches in 2 weeks.

19. Know Your Obstacles-
if you are going to remove them, you'd better
know them. keep in mind some obstacles aren't
going anywhere, they are part of your journey,
learn to work with them not against them! 

20. Plan for a Splurge Meal Once a Week-
and once you plan it, ENJOY it! this helps avoid the
guilt if you enjoy birthday cake at your kiddos party!
don't feel guilt- but only one guilt free splurge per week!  

My Young Business Man

My youngest kiddo,
is an energetic 7 year old
with big dreams for his life.

First, I'd like to just say
I wish I could dream that big
and Second, I hope they all
come true for him-

He is ALWAYS,
and I mean
ALWAYS,
asking to go door to door
selling some type of ware-

Homemade art work,
lemonade, cookies-
you name it and he wants to
SALE it- none of this
giving away garbage!

And as his mom,
I am ALWAYS saying NO!

So when our neighborhood put up
signs about a neighborhood garage sale,
I decided it was the perfect opportunity
for him to have a small
business venture!
I told him he could have a bake sale,
offering Lemonade, cookies and our
famous cupcakes, but he had to help!
He took it very seriously!!
He researched recipes online,
decided on what he wanted to offer
and made the shopping list.

He made a schedule of when we needed
to start cooking so I we could get it all
made and prepared.

That morning,
he set some magical internal clock that
isn't available for school days,
got dressed, cleaned his bedroom and
bathroom and made breakfast for
everyone.
By 9 o'clock, he was out and ready to go!
"VERY IMPRESSED" says I!!

He had so much fun and all I kept thinking
was how easy was this-
OK, I know it wasn't easy like sitting on a
beach reading a good book is easy,
but it was "watching a boys dreams and desires
come to fruition, seeing his sense of
responsibility peak to new heights,
watching him experience pride, joy and
happiness each time he had a customer
purchase one of his wares" EASY!

He loved it and for a few hours one Saturday
morning, I realized that magic happens
when a dreamer and doer get together and
make hopes become reality!

Chocolate Peanut Butter Cup Cupcakes

I am here to issue a great big
WARNING!!!
These Cupcakes are yummy-
not since I made the
Chocolate Cupcakes w/ Salted Caramel Cupcakes

& these Chocolate Coconut Cupcakes
have I made a cupcake that knocked
my socks off the way these have-

You know you have hit on success
when there is bowl licking


batter dipping & smiles oozing out of the kitchen...

Enjoy the recipe:


Chocolate Peanut Butter Cup Cupcakes

1 box Triple Chocolate Fudge Cake Mix
3/4 cup buttermilk
1/2 cup oil
3 eggs
1 tsp. vanilla extract**
1/3 cup creamy peanut butter
1 cup sour cream

Peanut Butter Frosting
1 cube butter
8 oz. cream cheese
1/3 cup peanut butter
2 tsp. vanilla extract**
4-5 cups powdered sugar

24 mini peanut butter cups

** I use Nielsen- Massey Vanilla Bean Paste,
and I believe especially in the frosting this
makes a TON of difference.

Preheat oven to 350 degrees.
In large bowl combine moist ingredients, don't over mix.
Combine wet and dry ingredients.
I let my mixer run for several minutes so
the batter is nice, light and airy.
Bake for 17-22 minutes until toothpick
comes out clean.
Allow to cool for just a few minutes and
than stuff a peanut butter cup in the center
of each cupcake.

Cool completely (I cool mine in a plastic
container with the lid on to retain moisture)
Frost with Peanut Butter Frosting
top with chocolate shavings if desired-

Oh mama mia, soo deliciouso!!

"Watch Me"


A few days ago,

this picture was posted on the 
Facebook page of a Fitness site
I subscribe too.
 
I immediately tagged the picture and the
quote as my New Mantra.
At first glance, I really like the phrase
and the strength of the girl in the photo!

But as I thought about this,
I realized this IS my mantra and
HAS BEEN for nearly 20 years-

When I was first diagnosed with Lupus,
I was really too naive to be overwhelmed,
scared or worried.
To be honest, I just kept my head in the sand
for a while-
But for some reason, Lupus was in the news
a lot at about the same time I got my diagnosis.
A popular movie was released where one of the
supporting characters dies from Lupus.
A famous actor's wife was discussing her
battle with Lupus and the risks she faced
in child birth.
Therapies were being researched...
And my husband of all of 1 year, kept
bringing me books about Lupus-
so I did a lot of reading.

It's strange to me now that I can remember it so well,
but I was reading in one book, a compilation of
individual stories, each story written by a patient of lupus.

One story hit me hard,
it was a mother who talked about how she frequently
felt that her children's lives were impacted
adversely because there were some days
she just couldn't get out of bed and
many days that she had to cancel plans
with her family because she didn't feel well.
I don't know why her story struck such a cord,
but it did-

I determined on that day, nearly six months after
final diagnosis,
that THAT wasn't going to be me.
I wasn't going to live my life defined by Lupus
nor was my family going to be so impacted by
this disease that I barely understood.

The first step I took was to educate myself
on the disease itself.
Next, I educated myself on my own body-
I journaled every thing about my life at the time-
what I ate, when I slept, what I did each day
and how I felt-
It didn't take long for me to realize that exercise
was HANDS DOWN the best thing I could do for
my body, my health and my wellness.

I am not an athlete and exercise isn't my Natural
first choice for early in the morning activities-
but I have made a decision to put exercise as a
priority and I believe it has paid off more than
any other thing I have been doing long term.

Several years ago, I became converted to the
importance of diet for overall health and wellness
as well. I have noticed a freedom from symptoms
when I combine a healthy diet with a regular fitness
regime.


Time and again, I have gone for a check up
and my doctors have been amazed at how incredibly
well I handle the disease.
I have friends who have
known me for years before knowing Lupus is
my constant companion and my children
have been free from the worry and impact that
I read about so many years ago.

Though there are days I need more than just a salad

and a yoga class...
 
and when those days come, I quickly look
for what might be out of balance!

Knowing my body has taught me that there are
days I need to rest, days I need to recover.
Because of this,I carefully schedule my life
so I have time to recover if I need to,

My experience has taught me that we are our
own best ally in the field of Health & Wellness.
Our attitude plays a huge part in how we overcome
our personal challenges.
We have more control than we understand in
finding health, happiness and JOY.

So back to my Mantra,
each time my body tries to tell me
that I can't do something because of
how I feel,
I take a deep breath and say,
"Ya, watch me do it" and I'll do it with a smile!

It hasn't been easy-
more days than not, I want to stay in bed
and talk about my pains-
but more days than not, I get out of bed
without saying a word-
and get on with the beauty that unfolds-

And for that, I have no regrets!

Child #2 has left the building-

Yes it's true! My daughter,
my rock, my biggest helper EVAH'
has left home to get started on her own life.

My friends keep reminding me that this is
what life is all about-
kids should grow up and move on
and MOVE OUT :)
And really,
I wouldn't want it any other way!

I am super proud of the beautiful girl she is,
Inside and Out-
she is more than I ever dreamed of being
at 18,
and I know that her potential for amazing
things is without limits.

Just one last tear, I promise

Good Morning Banana Muffins

It has been SOOO Hot
here in Sunny & Humid Dallas, TX!

I was doing fine this first ever
summer spent in the Dallas area,
but I'd be lying if I didn't confess that
I am absolutely, positively, 100%
READY for fall weather.

Well, I think all this heat and humidity
is making for a hotter house!
And a hotter house is making for fruits
that are getting ripe faster than usual!!

So when I woke up to BANANAS that
were more soft than any of us will eat-
I knew what was for breakfast-
NOT my favorite BANANA CAKE silly,
though you know me too well,

No! It was our favorite Banana Muffins.



Banana Muffins w/ Cinnamon & Sugar Topping

1 cup flour
3/4 cup whole wheat flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 cup mashed ripe banana
1/2 cup buttermilk
1/3 cup oil
1 egg, slightly beaten

Heat oven to 400. Line Baking cups with liners or
generously coat with your favorite spray.
Combine all dry ingredients.
Stir in remaining ingredients just until dry
ingredients are moistened.
Fill baking cups.
Bake at 400 for 18-22 minutes or until golden brown.
Immediately remove from pan.
In a small bowl, combine 1/4 cup Coarse Turbinado Sugar
(or regular sugar if you desire) and 1/2 tsp. cinnamon.
Brush muffin tops with melted butter and dip in
cinnamon sugar mixture.
