Favorite Holiday Muffins

Orange Cranberry Muffins


2 ½ c. flour                             
1 t. baking soda
2 eggs
2 c. buttermilk
1 ¼ c. sugar                                                                                                                                                                      
3 ½ c. cranberry/almond crunch cereal (Post)
½ c. margarine, melted                                                                                                                                                                                               
1 TBS. Orange peel (optional)


Beat eggs and buttermilk together.  Stir in melted margarine.  Combine flour, sugar, soda, cereal and orange peel.  Stir into milk and eggs with as few strokes as possible.  Muffins are best if allowed to refrigerate overnight, but may be cooked immediately.  Spoon into cupcake papers. 
Bake at 3500 for 20 minutes.
